Ingredients

  • 1 c shortening
  • ½ c brown sugar
  • 1 egg
  • 1 T water
  • 2 c raw grated carrots
  • 1 ½ c flour
  • ½ t baking soda
  • 1 t baking powder
  • ½ t nutmeg
  • ½ t salt
  • ½ t cinnamon

Directions

  1. Cream shortening and brown sugar together.

  2. Add the egg, water and carrots.

  3. Add all remaining ingredients and mix thoroughly.

  4. Pour the mixture into a greased ring mold and set in the refrigerator overnight.

  5. Remove from refrigerator ½ hour before baking.

  6. Bake at 350 for 35 minutes and turn out of the ring mold onto decorative plate to serve.
